Drunken Italian Noodles

And Left Overs That You’ll Love to EAT

An Italian pasta dish named Drunken Noodles!! What could be wrong with this one? How perfect for a cozy night in visiting the beach. It’s easy to make, any added choice pasta will do, and it’s all in the name! Welcome to my favorite dish!

After burning an easy meal, such as when I tried to make my boys a snack of piggies in the blanket, lol. I just had to redeem myself! I am a much better cook than that. This evening, I decided to grab a lovely Cabernet Sauvignon, an herby Blanc, dive into a new recipe, and, for dessert, Edward’s French silk pie.

What pasta goes best with Italian Drunken Noodles

That’s one of the best elements of the recipe because any noodle is good with this one. I made this dish with shortened egg noodles due to their lovely texture and the absorbency of the wine. After a search on the net, I have seen this dish with everything from elbows, which gives it a kid-friendly feel, to a dense shape like the Gemelli or the Cavatappi. For us, short egg noodles were perfect!

The Directions for Italian Drunken Noodles…

First brown the sausage, or whatever meat you choose with a little bit of olive oil in a pan. For the sauce, I placed a large, heavy-bottom pan over heat, and add a drizzle of olive oil; once hot, I crumble in the spicy sausage and brown it until cooked through, then remove it from the pan.

Then I cook my noodles according to package instructions, and keep them warm while I prepare the sauce. I caramelize my onions in the pan drippings, then add in my seasoning, followed by my bell peppers, and saute until golden; then, I add in my crushed, cut or minced garlic and wine, reducing that just a bit.

Finally, I add the diced tomatoes, with their juices, into the pan, along with the browned sausage, and allow the mixture to simmer for a couple of minutes; and then, I finish the sauce with a touch more olive oil and some fresh herbs before adding in my warm noodles, and tossing everything to combine.

The pasta will soak up the sauce! Yummmm…You’ll love this dish!
